Grilled Chicken Satay Skewers

Instructions
Satay
In a bowl, mix all marinade ingredients until well combined. Add chicken and coat evenly.
Cover and marinate in the fridge for at least 2 hours or overnight.
Thread marinated chicken onto skewers (3 - 4 pieces per stick).
Turn the Power to the highest setting and set the Time to 20 minutes (you don’t have to grill continuously, but remember to monitor the process). Allow the grill to preheat empty for 5 minutes. Lightly oil the grill plate if needed.
Place skewers on grill and cook for 6 - 8 minutes per side, turning until charred and cooked through.
Serve hot with peanut sauce, cucumber, onion, and rice cakes.
Peanut Sauce
In a small saucepan, heat oil and sauté garlic, shallots, and chili until fragrant.
Add tamarind paste, soy sauce, brown sugar, and crushed peanuts.
Gradually pour in water while stirring, simmer until sauce thickens (about 5 - 7 minutes).
Season with salt to taste. Add more water if needed to loosen.
Serve warm with the satay.

Cooking times may vary depending on several factors including the cut, size, and thickness of the meat, initial temperature (whether the meat is chilled or room temperature), fat content, and the type or amount of marinade used.Ingredients
For Satay:
- Chicken Thigh (boneless, skinless) - 600g, cut into bite-sized cubes
- Bamboo Skewers - soaked in water for 30 minutes
Marinade:
- Garlic - 3 cloves, minced
- Shallots - 3 bulbs, minced
- Lemongrass - 1 stalk (white part only), finely chopped
- Turmeric Powder - 1 tsp
- Coriander Powder - 1 tsp
- Cumin Powder - ½ tsp
- Brown Sugar - 1 tbsp
- Salt - ½ tsp
- Light Soy Sauce - 1 tbsp
- Coconut Milk - 2 tbsp
- Cooking Oil - 1 tbsp
Garnish (Optional):
- Cucumber - sliced
- Red Onion - wedges
- Rice Cakes (Ketupat)
Peanut Sauce:
- Roasted Peanuts - 100g (blended coarsely or crushed)
- Garlic - 2 cloves, minced
- Shallots - 2 bulbs, minced
- Red Chili - 1, sliced (optional, for mild heat)
- Tamarind Paste - 1 tsp
- Brown Sugar - 1 tbsp
- Light Soy Sauce - 1 tbsp
- Water - 200 ml (adjust for desired consistency)
- Cooking Oil - 1 tbsp
- Salt - to taste
