HERBAL CHICKEN SOUP

(Double-Boil Method)

Instructions

Blanch the chicken in hot water to remove scum, then rinse and set aside.

Place all ingredients into the ceramic double-boil pot.

Fill the inner pot of the appliance following the 'Double-Boil" water line of water indicated in the pot (ensure it surrounds the ceramic pot but doesn't overflow).

Gently place the ceramic pot inside and cover it with its lid.

Select the "Double Boil" function and boil 1.5 - 2 hours. Always check and top up water in the inner pot to prevent dry boiling.

Once done, season with salt to taste and serve warm.

Serving Suggestions

  • For stronger herbal flavour, extend the cook time slightly.
  • You can swap chicken for pork ribs or black chicken.
  • Goji berries can be added halfway through for a softer bite.

Ingredients

  • Chicken leg or thigh - 1 pc (blanched)
  • Dried red dates - 4 pcs
  • Goji berries - 1 tbsp
  • Dried longan - 1 tbsp
  • Angelica root (Dang Gui) - 1 slice
  • Codonopsis root (Dang Shen) - 2 to 3 sticks
  • Solomon's seal (Yuzhu) - 5 to 6 strands
  • Water - 500 to 600ml (inside ceramic pot)
  • Salt - to taste
